Stainless Steel vs 316L: What the Number Actually Means
"Stainless steel" on a product page tells you roughly as much as "wood" tells you about a chair. It is a family of more than a hundred alloys, and the differences between them are the difference between a piece you can wear in the sea and one that pits in a month.
Three grades come up in jewelry. Here is what actually separates them.

What molybdenum does
304 is the everyday stainless of kitchen sinks and cutlery. It resists rust well in ordinary conditions and is genuinely fine for most objects.
316 adds 2–3% molybdenum, and that single addition is what makes it resist chlorides — salt. It is why 316 is the grade specified for marine hardware and why it is the grade that matters for anything worn in the sea, in a pool, or against sweat for eight hours a day. Sweat is a chloride solution. That is the whole argument.
What the L is for
The L means low carbon: 0.03% maximum instead of 0.08%. It sounds like a rounding error and it changes what the metal does at a weld.
When steel is heated, carbon can bind with chromium at the grain boundaries. Chromium is what makes stainless stainless — it forms the invisible oxide layer that protects the surface — so carbon pulling it out of circulation leaves microscopic zones with nothing defending them. The technical name is sensitisation; the practical result is corrosion that starts at a joint.
Low carbon leaves too little to do that. This is why 316L, not 316, is the grade used for implants and surgical instruments: anything welded, worn against tissue, and expected to last.
Why any of this reaches your skin
A grade is also a nickel story. All three of these contain nickel in the alloy, but in 316L it is locked into a stable austenitic structure and does not migrate out at the rates that trigger contact dermatitis — which is why implant-grade steel is used on people who are demonstrably nickel-sensitive.
That is a different claim from "nickel-free", and worth being precise about: it is not that there is no nickel present, it is that there is none available. What causes a reaction is nickel release, not nickel content.
What to ask a seller
If a listing says "stainless steel" without a number, assume 304 at best. The grade is cheap to state and expensive to fake, so sellers who use 316L generally say 316L — and sellers who do not say anything usually have a reason.
The same applies to "surgical steel", which is a marketing phrase with no fixed definition. 316L is a specification. Surgical steel is a mood.
